Homemade Pizza
And as for pizza dough, here you go:
1. Whisk together in a bowl:
1-1/4 c. lukewarm water
1 T dry yeast
1 T sugar
2. Put in the food processor:
3 c. flour
1 t salt
2 T olive oil
(you can sub in 1 c. whole wheat flour or add dry herbs if you want)
3. Run the food processor, and add the liquid in a slow, steady
stream. The dough should form a ball; let it run about a minute, until
the dough is smooth, and nice and warm.
4. Take out the dough, divide into 2 pieces, and let rise (I do it in
a plastic grocery bag, but I don't know why. Maybe family tradition? I
think it helps keep the dough from getting dried out.)
5. Preheat oven as high as it will go with the pizza stone inside for 30 min.
6. When the dough has risen (1/2 hour to 2 hours, doesn't really
matter) and the oven is hot, gently press it out to a pizza shape on a
pastry cloth or floured surface. Transfer to a cookie sheet sprinkled
with corn meal and add toppings. Then immediately slide it onto the
pizza stone to bake (if you wait too long it sometimes sticks to the
pan.)
7. Cook about 10 minutes, or until the cheese is starting to brown on the top.

Toppings worth trying:
Buffalo Wings, blue cheese, thin sliced red onions
Chicken, blue cheese, thin sliced apples, bbq sauce
Pepperoni & sausage (put the sausage on raw; it cooks with the rest of the pizza)
Layer fresh basil leaves over the sauce, then cheese, then feta, roasted red peppers, green onions, and green olives |
